Ingredients

    4 potatoes, cubed and boiled
    1 head cauliflower, steamed whole
    1 Eggland's Best Egg, hard boiled

    1/4 cup Greek fat free plain yogurt
    1/4 cup mayonnaise
    1/2 tsp Coleman's dry mustard

    1 large stalk celery
    1/4 cup diced onion or green onions
    1/4 cup shredded carrots
    6 sliced or diced green olives

    salt, pepper, parsley and paprika to garnish

Directions

While cooked ingredients are cooling, assemble remaining ingredients in a bowl and mix well. Then add cooled items and garnish.
The trick to loving this recipe is to make it exactly like you would normally make your potato salad. Just decrease the eggs and mayo you would normally use.
I love the Greek yogurt, it has a completely different taste and consistency than regular yogurt. I use it to substitute half of the mayo or sour cream and I can't tell the difference.
