Introduction

Ingredients

    1 c white flour
    1 c wheat flour
    1 c rolled oats (Quaker)
    1-1/2 t baking powder
    1-1/2 t baking soda
    1-1/2 t cinnamon
    1/4 t ground allspice
    1/4 t freshly ground nutmeg
    1 t salt
    4 eggs (or 1 c egg beaters)
    1/2 c Splenda
    1/2 c brown sugar
    1/4 c oil
    1/2 c applesaue
    2 med overripe bananas, mashed
    1 t vanilla
    2 c zucchini, shredded
    1 c raisins (or Craisins)

Directions

1. Preheat oven to 350 deg.
2. Wisk together flours, oats, baking powder, baking soda, cinnamon, allspice, nutmeg & salt.
3. In a separate bowl, beat the eggs.
4. Add the sugars, oil, applesauce, and mashed bananas to the eggs. Mix well.
5. Add the vanilla
6. Combine the wet and dry mixtures. Stir until just combined.
7. Fold in the zucchini and raisins.
8. Pour into 2 lightly greased loaf pans (9x5)
9. Bake for 45-50 minutes or until toothpick comes out clean.

    This was very good. Good way to use up zucchini; we used half of a cup of white sugar in place of Splenda. - 9/3/16
