Introduction

This is a simple recipe with few ingredients, yet very yummy and very low fat. It is adapted from my regular potato salad recipe. This is a simple recipe with few ingredients, yet very yummy and very low fat. It is adapted from my regular potato salad recipe.

Ingredients

    5 c. Red potatoes, cubed
    4 oz. Sweet pickles, diced (3-4 depending on size)
    1 c. Fat Free Mayonnaise (16 Tbsp.)
    2 Hard boiled egg whites, diced
    1 Tbsp. Onion, minced
    2 tsp. Yellow mustard
    1/2 tsp. Black pepper
    1/4-1/2 tsp. Paprika

Directions

Boil potatoes until soft but not mushy. Drain and place in a large bowl or shallow baking pan. Make sure they are no more than three layers thick. Place potatoes in the freezer until chilled, stirring once.

While potatoes are cooking and chilling, mix all other ingredients in the bowl you will serve your salad in. Add potatoes and stir gently.

Sprinkle a little bit of paprika on top for color, if desired.
