Ingredients

    4 tsp rice bran oil
    2 cups dried navy beans, soaked and cooked (or 6cups cooked or canned navy beans) (drain and rinse canned beans before use)
    2 onions, finely diced
    2 cloves garlic, crushed
    3 (400g) tins of chopped tomatoes in juice
    1 cup water
    8 tsp golden syrup
    4 tsp blackstrap molasses
    1 bay leaf
    1/2 tsp ajowan seeds, crushed (optional - these help reduce gas)
    1/4 tsp allspice
    2 tsp dry mustard (increase to 4 tsp next time)
    1/4 tsp liquid smoke
    4 tsp apple cider vinegar


Tips

Soak and cook your dried beans the day before to save on prep time, else allow an extra 2-3 hours (depending on whether or not you have a pressure cooker).


Directions

1. Fry onions and garlic in the oil in a large cast iron casserole dish, until golden brown.
2. Add all other ingredients and stir well
3. Simmer over low heat for about 2 hours.

You could also bake this in the oven at 160 degrees celcius, provided your casserole has a tight lid and you check often to make sure it doesn't dry out - or reduce the water to 1/2 cup and cook in a pressure cooker all day.

Serving Size: Makes 8 servings of about 1.5 cups each.
