Introduction

Ingredients

    1 cup dry tri-colored quinoa
    2 cups chicken broth - low sodium
    1 can garbanzo beans
    1 can black beans
    1 egg
    1/4 cup red pepper
    1/2 cup onions
    3 garlic cloves
    1 tsp. turmeric
    8 basil leaves

Tips

Add some olive oil to your clean hands before making patties. Put into refrigerator and cover. You are ready to cook patties in a frying pan.


Directions

Cook quinoa in chicken broth for 4 minutes in microwave, stir, then 2 more minutes covered. Let rest 5 minutes. Place 2 cans beans into a food processor. Sautee peppers and onions in 1 tbs. olive oil until carmelized. Add to beans. Place 1 egg into processor along with cooked quinoa. Pulse until a workable paste is formed. If too wet, add a few tablespoons of bread crumbs until you can form a pattie.
