Ingredients

    1 Full Carton of Pomi Brand Chopped Tomatoes (may substitute 2 cans tomatoes)

    2 Carrots, Sliced thin

    2 Celery Stalks Sliced thin

    1 med yellow onion, chopped fine

    1 bell pepper chopped fine

    1 tsp coconut oil

    1 cup almond milk

    2 cloves garlic pressed

    Italian Seasonings and Celtic Sea Salt to Taste

Tips

I like to serve this with buttered Paleo Bread, salad and Turkey Ham. Stevia sweetened lemonade adds a refreshing touch.

The high sugar content is because of the carrots, but remember that this soup has a lot of fiber to balance it. As long as you serve it with protein, it shouldn't be a problem for most people.

If desired, you can garnish with jalepeno slices and cilantro for a Mexican flair.


Directions

Chop and sauté fresh vegetables in coconut oil until just tender. Add full carton of Pomi Chopped Tomatoes and 1 cup almond milk and bring to a simmer. Cook on low for about 30 minutes until all flavors have blended.

Press 2 cloves of garlic and add to soup. Add Celtic Sea Salt and Italian Seasonings. Serve piping hot by a crackling fire!
