This is the healthiest I could get this--good fiber from the WW elbows though. There is no macaroni and Cheese in France, so this is what I make when I have a taste for it. Ingredients

    4 oz uncooked whole wheat elbow macaroni
    4 wedges Laughing Cow Light cheese
    1-2 TBLSP milk
    salt, pepper to taste

Directions

Makes enough for 2

Cook the elbows according to package directions. Drain almost, but not until totally dry and add the unwrapped Laughing Cow Light wedges, the milk, salt, pepper and stir.

    My family used to be mac n cheese freaks until we started trying to straighten ourselves. I'm not sure if it was the cheese or the brand of whole pasta I used, but this recipe was fair. - 2/11/09
