Ingredients

1cup wheat bran cereal
1 cup whole wheat flour
1 cup 1% milk
1/4 cup brown sugar
2 oz zucchini shredded
1 tablespoon wheat germ
1 tablespoon ground flaxseed meal
1 egg
1 large ripe banana 175 grams
1 tablespoon ground cinnamon
2 tsp ground ginger
1 tsp vanilla extract
1/4 tsp salt
2 tsp baking powder
1 tsp baking soda
Directions
Preheat oven to 375 degrees. Soak bran flakes, wheat germ and flax seed meal in milk for 15 minutes. Mash banana and add to bran flakes mixture. Add shredded zucchini, egg, brown sugar, cinnamon, vanilla and ginger to mixture, mix well.
In a separate bowl combine flour, salt, baking powder and baking soda. Add dry ingredients to wet ingredients. Mix until combined do not over mix, batter will be lumpy. Stir in raisins. Spray muffin tin with scant amount of Pam baking spray. Fill muffin cups about 3/4 full. Bake for 15-18 minutes. Muffins are done when they spring back to the touch.
Makes 12 muffins
*you can add walnuts or other nuts if you like, but it will increase the calorie count.

First off, how much raisins do you add, they are not listed. I didn't realize they were missing until I had the batter in the muffin thin. That said, I used all bran buds, and added 6 oz of zucchini and 2 large bananas. The spices were awesome. The muffin was very moist, a real hit in our house. - 8/21/11
