Introduction

I like to make a big batch and then serve it with many meals throughout the week. This Potato salad is chunky. I like to make a big batch and then serve it with many meals throughout the week. This Potato salad is chunky.
Number of Servings: 20

Ingredients

    6-8 Large Potatoes
    4-5 Large Hard boiled eggs
    1 cup of Mayonnaise
    1TBSP of dijon mustard
    2 Tsp of brown mustard
    3 large stalks of celery
    1 large onion
    1 tbsp of salt
    1 tbsp of pepper
    2 tsp of garlic
    2 tsp of paprika

Directions

Boil potatoes until tender. Cool.

Dice all vegis and eggs. (except for 2 eggs)

Mix all ingredients except for 2 eggs and paprika. Mix well.

Cool and store in refrigerator for at least 3 hours.

Slice 2 eggs thin and lay on top of finished and mixed salad.

Sprinkle with Paprika.
