Ingredients

    500 grams cooked whole wheat pasta, about a pound, cooked, 3 cups cooked elbows for me
    265 grams chick peas, drained--one reg can
    250 grams surimi, chunked up, about half a pound
    3 chopped scallions
    3/4 cup salsa
    salt, pepper to taste

Directions

Makes 6 servings
Cook and drain the pasta. Chunk up surimi, chop scallions, mix all ingredients and refrigerate for about an hour.
