Introduction

Tender crisp green beans in this vinegrette marinade is the epitome of summer goodness. Tender crisp green beans in this vinegrette marinade is the epitome of summer goodness.
Number of Servings: 6

Ingredients

    1 pound fresh green beans, trimmed
    3 tbsp olive oil
    1 tbsp red wine vinegar
    2 tbsp chopped Shallots (1 small)
    1/8 tsp Granulated Sugar
    1/8 tsp dry ground mustard

Tips

Do not use frozen or canned beans, as they will be mushy.


Directions

Steam or boil green beans until bright green and tender crisp, about 3- minutes. They should NOT be mushy. While beans are steaming, prepare a large bowl with cold water. Immediately drain beans and place in the cold water until they are completely cool. Pat dry. Return beans to dry bowl.

Whisk EVOO, vinegar, shallots, sugar and ground mustard in small bowl. Pour over green beans and toss to coat. Cover and chill for at least 1 hour and up to overnight.
