New Jersey personality Produce Pete calls this Gumbroit. It's a stovetop version of the turkish guvec, like a ratatouille light on the tomatoes and with green beans. Ingredients

    2 medium onions, diced
    4 cloves garlic
    2 bell peppers, diced
    2 small zucchini, sliced or diced
    2 small asian eggplants or 1 italian, diced (2 cups)
    2 medium tomatoes
    1 c. okra, sliced (optional)
    1 pound green beans (about 4 cups)
    1 T. fresh oregano or 1 t. dry oregano

Directions

Saute onions and garlic til translucent. Add rest of ingredients, except green beans, and cook covered but stirring occasionally til eggplant's tender (about 20 minutes). Add green beans and either let steam by re-covering and removing from heat (for al dente beans) or saute together 5-10 minutes.
