Introduction
I love sneaking veggies into my kids foods, and this is one of my (read: their) favorite recipes! I took a recipe from Jessica Seinfeld's book "Deceptively Delicious" and altered it to meet my families needs and desires. It tastes great, but if you have one who has a problem with textures, leave out the chick peas, they make it a little gritty. Oh, and just a suggestion, if your kids won't eat anything green, add more carrots and butternut squash in place of the spinach, the color will blend better. Ingredients

1 box mini Farfalle, Penne, or wheel pasta (I use Barilla)
6 slices of Kraft American cheese
Optional: 1 tablespoon real butter (why eat the fat if it's fake??)
1 cup 2% buttermilk
1 cup carrots
1 cup fresh spinach
( or use equal amount of steamed or roasted squash!)
1 15.5 oz can chick peas
Directions
Prep time includes steaming and pureeing fresh veggies.
Steam and puree spinach and carrots (together or separately, it doesn't matter)
If you are using squash, it is best to roast it in the oven, instead of microwaving.
Puree chick peas in blender with buttermilk and butter until smooth
Boil pasta until al dente
When pasta is done pour all purees and all of the cheese into the a large bowl and add cooked and drained pasta.
Stir vigorously until cheese is melted.
serve immediately.
serves 8 as a main dish or 16 as a side dish.
