Number of Servings: 6

Ingredients

    1 can Primo Lentils (540 ml or about 2.3 cups)
    1.3 cups of Campbell's Chicken Broth (reduced sodium)
    1 large red onion (cut into large pieces)
    1 clove garlic (minced)
    2 medium red potatoes (quartered)
    1 medium tomato (diced)
    1 tsp nutmeg
    1 tsp dried rosemary (crushed)
    1 tsp chili powder


Directions

Place all ingredients into a medium saucepan. Heat to boiling. Stir, then reduce heat to simmer. Let simmer, at least, until potatoes are soft (about 45 minutes to an hour). If you want a thicker "stew-like" consistency, continue to simmer until the dish is as thick as you desire. Serve when you are ready to eat. One serving is about 3/4 cup if it is soup thickness or 1/2 cup if it is "stew" thickness.
