Ingredients

    2-3 sprays Extra Virgin Olive Oil Organic Cooking Spray (Trader Joe's)
    1 cup Red Onion, diced
    2 cups Liquid Egg Substitute (Egg Beaters)
    4 tbsp Non-fat Milk
    1 tsp Cumin Seed
    1 tsp Cayenne Pepper
    1 tsp Black Pepper
    6 oz Jennie-O Extra Lean Turkey Ham, diced
    1 cup Sweet Red Pepper, diced
    1/2 cup Low-fat Sharp Cheddar Cheese, pre-shredded


Directions

1. Dice 1 cup of red onion and set aside.

2. Dice 6 oz of Jennie-O Extra Lean Turkey Ham and sweet red pepper. Combine in bowl and set aside.

3. Beat Egg Beaters (or other liquid egg substitute), non-fat milk, cumin seed, cayenne pepper and black pepper in a medium bowl with a wire whisk until well blended.

4. Spray medium skillet with cooking spray. Add red onion; cook over medium heat for 2 minutes, or until translucent, stirring occasionally.

5. Add Egg Beaters; cook until Egg Beaters are almost set; stir.

6. Add Jennie-O Turkey Ham and sweet red pepper mixture. Cook an additional 5 minutes, or until it reaches desired doneness, stirring often.

7. Serve 4 equal portions with 1/2 cup of brown couscous, if desired.
