Ingredients

    2 cup Instant brown rice
    2 lbs chopped frozen broccoli
    1 large chopped onion
    1 small 8 oz jar of jalapeno cheese whiz, low fat
    2 can (8 oz) water chestnuts, sliced
    1 can reduced fat mushroom soup
    2 cup non-fat chicken stock/broth
    1 cup chopped walnuts
    Pam cooking spray

Directions

Mix broccoli, onion, chestnuts, walnuts, rice and 1 cup of the stock. Pour into 13x9 casserole pan coated lightly with Pam. Melt cheeze whiz and soup together, with 1 cup broth. Pour soup mixture over casserole, fork in - do not stir.

Bake at 350 for 45 min.
