Introduction

This is very easy to make, and it is delicious on those bone chilling nights! What I like best, however, is that it is low fat AND low sodium, which is great for those of us who have to watch their sodium intake.

Any chicken broth will work, but I chose this one because of its lower sodium content.

Ingredients

    1 large skinless, boneless, chicken breast
    2 Tbsp. Bertolli Extra Virgin Olive Oil
    2 cans fat free, 40% less sodium chicken broth
    4 cans water
    1/2 cup chopped celery
    1/2 cup chopped carrots
    1/4 tsp garlic powder
    1/4 tsp. onion powder
    1/4 tsp. ground black pepper
    1/2 Tbsp. dried parsley
    1 cup Allegra Linguine No. 17, broken in small pieces

Directions

Saute chicken breast in olive oil until browned. Add all ingredients, except linguine, to water and broth mixture. Simmer about 30 mins. Add linguine and cook about 9 minutes.

If you don't have to watch the sodium intake, a pinch of salt (or enough to season to taste) can be added.

Makes approx. 10 - 8 oz. cups of soup.
