Ingredients

    1/4 Cup chopped sweet onion
    1 tsp. Minced garlic
    1 Cup cooked short grain brown rice
    1 Cup chopped fresh spinach
    3 Tbsp. (about 3/4 oz.) crumbled fat free feta
    Salt, to taste
    Ground black pepper, to taste

Directions

Lightly mist a small non-stick skillet with olive oil spray. Set over medium heat for 30 seconds. Add the onion and garlic. Cook, stirring occasionally, for 4 to 6 minutes, or until tender. Do not allow to brown. Add the rice and spinach. Cook, stirring constantly, for 3 to 5 minutes, or until the spinach is almost completely wilted. Stir in the cheese. Season with salt and pepper. Serve immediately.

Makes 2 (generous 1/2 cup) servings.
