Introduction

This is our family's traditional Christmas Eve dinner. This is our family's traditional Christmas Eve dinner.
Number of Servings: 12

Ingredients

    2 tblsp canola oil
    1 onion, diced
    2 cloves garlic, diced
    1 jalapeƱo, diced (with or without seeds)
    3/4 lb kale (washed well and drained)
    1 1/2 lbs sweet potatoes (approx 3-4)
    1 1/2 quarts low sodium chicken broth/stock
    1 can unsweetened coconut milk
    (1 cup rice per serving)

Directions

saute the onion, garlic & jalapeno in the oil until onion is translucent. add chicken broth, kale and sweet potatoes, bring to a boil, then reduce heat and let simmer 30 minutes (or until potatoes are done). Stir in coconut milk just to warm through.

Serve in a bowl over one cup white rice.

    Very Good
    I really like this recipe- but it needed extra salt to help with the taste. 12 servings seems unlikely- 4-6 seems more reasonable... - 3/18/11
