Ingredients

1/2 cup Bisquick
4 eggs
1 cup froz spinach
1/4 cup raw onion
1 cup raw mushrooms broken up
2 cups skim milk
1 TBL grated parm cheese
2 slices low fat swiss cheese
1/2 cup non-fat shredded cheddar cheese (or cheese of choice)
Directions
Preheat oven to 350.
Mix bisquick, eggs and milk together and set aside.
Then spray bottom of quiche pan with non-stick cooking spray. Break up frozen spinach into small pieces and layer bottom of pan, add onion, mushrooms and cheeses (except parm cheese).
Pour bisquick mixture on top of veggie and cheeses, stir slightly. Sprinkle top with parm cheese and bake for 50 minutes.
Makes 8 servings, 126 calories each.
