Introduction

A recipe I modified from a recipe I found on this web site. The batter comes out fairly thick, so I add the 1/2 cup of water as necessary. I live at a high altitude (alt = Denver), so you may need to add less water. I add fresh blueberries to the batter, and melt frozen berries in the mircowave and add them on top for a delicious breakfast! A recipe I modified from a recipe I found on this web site. Ingredients

    1 cup whole wheat or *nutri wheat flour
    1/3 cup of flax meal (I use Bob's Red Mill)
    3 tsp baking powder
    2 tsp unpacked brown sugar
    1 tsp salt
    1 tsp cinnamon (or more if you like!)

    2 egg whites beaten
    1/2 cup applesauce (unsweetened)
    1 tsp vanilla extract
    2-3 tbl water (or amount to reach desired batter consistency)

    Cooking Spray (Pam) or olive oil - just enough cooking

Directions

1. Pre-heat non-stick grill or electric fry pan to low-medium heat.

2. Mix all dry ingredients in a large bowl.

3. Once well blended, add beaten egg whites, apple sauce, and vanilla. Mix until well blended.

**If batter is too thick, gradually add water until desired consistency is achieved.

4. Add fresh or frozen blueberries (optional)

5. Cook each side until nice and brown (approx 2-3 min), flipping and checking often.

**These pancakes puff up thick, so low heat is necessary to cook through.

6. Melt frozen berries in mircowave for delicious low fat sauce, and/or serve with light no sugar added organic syrup.
