Introduction

This is the best low fat bread. Banana's & blueberries give this quick bread a great taste. This is the best low fat bread. Banana's & blueberries give this quick bread a great taste.

Ingredients

    1-1/2 C unbleached all purpose flour
    1/3 c sugar
    1/3 c honey
    2-1/4 double acting baking powder
    1/4 tsp salt
    1 tsp grated lemon rind
    1 large egg
    1/3 C Canola Oil
    3/4 c mashed banana's
    1/2 c blueberries (frozen or fresh)

Directions

Sift together flour, baking powder & salt in small bowl.

Cream Oil, sugar & honey. Beat egg and beat with liquids. Beat in Fruit and lemon.

mix 1/3 of dry ingrediants at a time to make sure it is well mixed. Bake 60 minutes @ 350 or until toothpick comes out clean.

Preheat oven to 350 degrees F (180 degrees C) and place oven rack to middle position. Butter (or spray with a non stick vegetable spray) the bottom and sides of a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan

I like to cover the top with a tbsp of brown sugar (opt)
