Introduction

Ingredients

1 acorn squash
1 TBSP canola oil
2 small apples diced, peels on
1/2 c crushed walnuts
1/2 cup low sugar apple juice of your choosing
2 tbsp brown sugar/splenda mix
1 tsp salt
1/2 tsp ground nutmet
Directions
preheat to 350. Allow about 1.5 hours for total prep.
Cut acorn squash in half, remove and discard seeds and membranes. Put squash, cut side down in baking dish with about 1 inch water. Bake covered 45 minutes, and drain. Return squash to dish, cut side up, and set aside. Leave Oven On.
Heat canola oil in fry pan, add apples, walnuts, apple juice, brown sugar/splenda, salt, and nutmeg. Cook until apple bits are just tender. Spoon into squash halves.
Bake in oven for 15 minutes more or until apples are tender.
Serve!
