Ingredients

    4 cups whole wheat flour
    1 tsp baking soda
    4 tsp baking powder
    1 tsp salt
    1 Tbsp pumpkin pie spice
    2 cups Splenda sugar blend for baking
    1/4 cup ground flax seeds
    1 cup egg subsitute
    1 cup fat-free milk
    2 cups canned pumpkin
    2 ripe bananas, mashed

Directions

Makes 2 loaves 16 slices per loaf for 32 total servings

Preheat oven to 350 Degrees
Combine all dry ingredients except flour in a large mixing bowl. Make a well in the center.

Combine all wet ingredients in a medium bowl and mix until combined. Add to dry ingredients and whisk together until smooth. Gradually add in flour, stirring lightly until moistened.

Line 2 large loaf pans with parchment paper and lightly coat with nonstick cooking spray. Spoon batter into pans, dividing equally.

Bake for 1 hour or until toothpick comes out clean. Cool loaves in pan for 10 minutes then transfer to cooling rack.
