Introduction

Ingredients

    10 cups chicken broth
    2 cups split peas, rinsed and sorted
    20 baby carrots, chopped into bits
    1 medium potato, chopped into bits
    1 medium onion, chopped into bits
    5 stalks celery, chopped into bits
    2 T minced garlic
    1 tsp salt
    1 tsp pepper
    1 tsp red pepper flakes

Directions

Saute chopped onion, carrots, potato, celery and garlic, in medium large soup pot for 5 minutes until tender. (I used 2 T butter to saute however that isn't listed in the ingredients... you may wish to use non-stick cooking spray). Add 10 cups chicken broth, 2 cups rinsed and sorted split peas, salt, pepper and red pepper flakes. Bring to a low boil, then simmer for about an hour until reaches desired consistency. Makes 6 very hearty servings.
