Ingredients

# nonstick cooking spray
# 1¾ cups sliced mushrooms
# 1 cup fat-free Plain Mountain High Yoghurt
# 2 tablespoon all-purpose flour
# 1 8 oz. package French-cut frozen green beans, thawed
# 1 tablespoon sugar
# ½ teaspoon kosher salt
# ¼ teaspoon black pepper
# 1 yellow onion, sliced thinly
# 2 tbsp all-purpose flour
# 2 tbsp crushed whole-grain crackers
# 1 tsp kosher salt
# nonstick spray (olive oil)
Directions
Preheat the oven to 475 degrees F.
Combine the onions, flour, crackers and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 350 degrees F.
In a medium skillet over medium-high heat, heat spray and sautˇ mushrooms for about 4 to 5 minutes. Remove from heat.
In a large glass or ceramic bowl, combine yoghurt with flour. Add green beans, sugar, salt, pepper, and cooked mushrooms. Mix well. Add half of the onions and mix well. Pour into a 1½ -quart casserole dish. Top with the remaining onions. Bake at 350¼F for about 30 minutes, until bubbly around edges.
