Ingredients

2 C Quaker Oat Bran Hot Cereal, uncooked
1/4 C firmly packed brown sugar
2 tsp baking powder
1/2 tsp salt (optional)
1 C 1% low-fat milk
2 egg whites, slightly beaten
1/4 C honey (or molasses)
2 Tbsp unsweetened applesauce (replaces 2 Tbsp vegetable oil from Quaker's recipe)
Directions
Heat oven to 425°F. Line 12 medium muffin cups with paper baking cups or spray bottos only with no-stick cooking spray. Combine dry ingredients; mix well. Add combined milk, egg whites, honey & applesauce; mix just until dry ingredients are moistened. Fill prepared muffin cups 3/4 full. Bake 15-17 minutes or until golden brown.
Variations: Stir into batter 1/2 cup fresh or frozen blueberries or 1/2 cup (1 medium) mashed, ripe banana.
