Introduction

I had some left over sauteed shrimp from PF Changs and through this together. My 12 year old daughter begged me to make it for her next weekend! I had some left over sauteed shrimp from PF Changs and through this together. My 12 year old daughter begged me to make it for her next weekend!

Ingredients

    8 Large eggs
    1 cup of fresh spinach
    1 clove of garlic
    1 tbsp of I CAN'T BELIEVE IT IS NOT BUTTER LIGHT
    8 large shrimp
    2 oz of light Mozzarella cheese
    1 oz of grated asiago cheese.
    2 Tbsp of 2% Milk

Directions

Saute fresh Spinach, 1 clove of pressed garlic, 8 large raw shrimp (peeled and deveined and 1 tablespoon of margarine in omelet pan. Remove and set aside.

whisk 6 eggs and 2 tbsp of milk. Pour into omelet pan, cook on low for 3 or 4 minutes (careful not to overcook)

add spinach and shrimp mixture, and cheeses, fold, flip and serve.
