Ingredients

2 cups Soybeans
6 nice slices of Turkey Pastrami
2 large onions
1 lg stalk celery
1 green bell pepper
1 yellow bell pepper
1 c molasses
1/2 c Chipotle BBQ Sauce ( or other )
1/2 c packed brown sugar
1 sm tin tomato paste
1/2 c ketsup
2 tbsp canola oil
1 tbsp soy ( corn ) oil margarine
1 tsp sea salt
2 Tbsp Fresh ground black pepper
( optional - but; ADDS FLAVOUR!! ) 6 slice Cdn. Bacon

Makes 12 8oz servings.
OK!! Let's get Serious now, & Do Not let either the prep or cooking time bother you. Who does slow-home-food in minutes anyway??
#1. 180 min Prep time....30 minutes real hands on...the rest is just, sittin n'awaitn. Pop your 2c of dry soybeans into a 5L / qt stock pot. ( I use cast iron ) Cover completely with cold filtred water & let sit! Every 50 min. totally drain the beans & fully recover them with more cold filtred water.
See! That was an easy 3hrs.
Cookin time!! Drain beans, cover with more filtred water & bring to a boil for 15 min. Toss in 1 tbsp of your sea salt to prevent boiling over. Then reduce heat to an absolute simmer & run for 1hr 45min. Please remember to stir about ever 20 -30 min. Five Hours done!! Wow!!
Prep time again! Medium or fine dice your 2 large onions, stalk of celery, both yellow & green bell peppers & the 6 slices of turkey pastrami. Pitch into ( cook's term ) a very hot heavy bottom iron or S-Steel pot with the canola oil, margarine blend rippling ( ya'know...like the quiet pond after a pebble hits the surface - not smokin!! ) Sear & carmelize - veg & meat... shouldn't take more than 3 - 5 minutes. Please stir for 1 - 2 minutes after adding each of the next ingredients. Please stip thru your sea salt & freshly ground black pepper at this time. Dump 100% of the brown sugar, then the molasses, chipotle BBQ sauce, ( or Hickory if'n ya'll servin up ribs wit-it ) tomato paste, and finally the ketsup.
Prep time is over!!
Place into your 325 deg F preheated oven, covered for 2 1/2 hrs. Last 30min...Add flavor by latticing 6 strips of Cdn Bacon (optional) on top...crank up the heat to 400 deg F & run uncovered.
I serve this up with Slowly- Applewood smoked N'awlins Pulled Pork, dark rye bread & heap Strong Coffee.
