This is a favorite recipe I found in a magazine but I "play" with the ingredients. You can lighten the recipe with light cream cheese and yogurt, use splenda, part whole wheat flour, and use part apple sauce for the oil - but here is the recipe in its original form. Very pretty and satisfying too! Note that it is best made the night before you want to eat it!

This is a cake originating in costa rica and nicaragua. Many people use it in mexico also. It isn't the best for you but is a great treat. It is very moist and is great with fruit on the top!

Based on "Self-Crust Pumpkin Pie" (a great recipe), but used Splenda and Splenda Brown Sugar in place of the regular white and brown sugars. This recipe drops the calories to from 133 to 104 and the carbs from 28 to 21.
