I adapted this from a recipe in Cooking Light. The original recipe called for all white flour, buttermilk, butter, and 2 tea bags and said it made 12 muffins. I only got 9, so I'm assuming their muffins were smaller. I used coconut chai tea.
These stayed pretty moist, I actually used almond extract not vanilla because I didn't have any they have a nutty flavor, I like them because they are pretty healthy and they taste good
A treat breakfast! Makes for a huge serving size. Could serve 8 people if served as a side dish.
Mix first 4 ingredients together. Add the rest. Bake in 9 x 13 pan at 350 degrees for 30-45 minutes until set.

I made a few modifications with what I had on hand. Also, I find when baking that it helps to measure by weight, not volume.
This is the easiest recipe I have found for cooking steel cut oats. We like this much better than old-fashioned oatmeal-so creamy!! It reheats really well!
My husband loves these healthy muffins! We put them in the freezer and reheat in the morning-easy grab-n-go breakfast!!
