Our family's spin on a favorite breakfast, French toast. Kinda of Paleo( Not completely) and Gluten Free
We used coconut milk instead of regular milk, and for the bread we used a favorite recipe for gluten free bread.
Easy to make with only four ingredients and quite tasty for those of us afraid of the green monster drinks. I use 1 cup of water to make this a little thicker, but my dh likes 2 cups water to make it thinner.
Tofu scramble is a popular vegan breakfast dish similar to scrambled eggs. Although this recipe calls for onions and green peppers, try adding some mock meat crumbles, or experiment with different vegetable combinations, such as spinach, mushrooms and green onions. The possibilities for tofu scramble are endless!

My husband and I use this recipe (with much flexibility) for breakfast. But like I said, this is very flexible and easy
One dry cake mix
1 egg
1 can pumpkin
2 cup shredded zucchini
1 cup raisins
1/2 cup walnuts
1/2 cup coconut
1/4 cup milled flax seed
Mix all together and spoon into muffins tin lined with cupcake papers. Bake at 425 degrees for 30 minutes.
