A Turkey Filling good for use in wrpas, or great just served on rice!
My German grandmother used to make this salad all summer. If you prep the night before, it takes 5 minutes to toss together and pop in the fridge. Good as a stand alone meal or side.
Quick and Easy for lunch - make a whole tray and break it up into seven portions
I mixed this up from a leftover couscous dish and leftover vegetables. I liked it so much I now make it on purpose. The seasonings might seem incongruous, but they work together well.
Note- I prepare the whole bag of couscous with the onion and spices, then we eat half as a side dish and I make the salad with the rest. Nutrition and recipe counts are for half the bag. I left the whole onion and whole amount of spices and olive oil so you can make the whole bag. Thus your actual calories for this dish will a little lower than documented.

My original recipe used packaged spanish rice and I noticed how much sodium was in it so I remade the recipe using white and brown rice with a bit of pico de gallo mixed in. This makes a great lunch with a salad
