Great summer meal (especially once the garden starts producing). Nothing to "cook" and all you need is a good blender. Just about ANYTHING can be put into gazpacho as long as you still have the tomatoes and the cucumbers (e.g. this recipe has yellow beans, because they were just picked). I wasn't "feeling like" peeling tomatoes, so I used canned...if using fresh, peel and deseed a pound and a half of tomatoes. You can omit the Sazon, but it really makes fresh veggies POP!
I modified a cheez sauce recipe that I've seen, added it to cooked whole wheat rotini pasta, and made easily the best mac and cheez ever. Vegan tastes delicious and feels right.

A more diet friendly version of Philly crab roll. We removed the fatty cream cheese and replaced it with some extra avocado so we wouldn't lose the creaminess. And we cut down on the amount of rice so as to keep carbs lower. White sushi rice can also be replaced with brown sushi rice or quinoa but it is difficult to keep quinoa sticky without adding sugar.
A tasty twist on a classic. This particular recipe will feed a family of five that can be prepared ahead of time and eaten on the fly. Great for a light dinner before running off to the kids' game.
3 cans of SW Kidney Beans 2 undrained and one drained 3 cans Tomato Sauce 2 packets McCormick Seasoning
