I found a recipe for buffalo chicken burgers that included a slaw and was very time consuming. I wanted something quick and easy so I modified it to this.

With elements taken from Rachel Ray and Eating Well Magazine, these eggplant stacks are amazingly crisp and delicious. I passed on the greens,
Great sandwich filling, but even better on a large whole-grain wrap (tortilla). If you do a low-carb diet, you could serve it over shredded lettuce or spinach. [Created 2008-03-07.]
This sandwich spread my mother made each Christmas season. It is still a favorite in my family. I have entered the receipe with the lighter ingredients so that I can enjoy this treat.

A Mexican-style torta is just like a burrito, except the “wrapper” is a hollowed-out roll instead of a tortilla. Here it’s filled with spicy mashed black beans and a quick guacamole. Take this vegetarian version to another level (and add calcium) by melting Monterey or Pepper Jack cheese onto the bean side of the sandwich. Serve with: Mexican corn or Spanish rice if you prefer. I adapted this recipe from EatingWell.com. You can use cooked shredded chicken breast in place of the beans if you prefer!
While browsing the Whole Foods Market Recipes iPhone app the other day for vegetarian dishes, I came across a recipe for Homemade Black Bean Burgers. I had all the ingredients stocked, so I decided to make up these burgers for a BBQ my husband and I hosted for our friends and family. These burgers were delicious, but what I got most rave reviews about were a variation of these made from kidney beans.
These kidney bean burgers were actually a happy accident, as I grabbed a canister that I thought was bread crumbs and started pouring. It turned out to be Flax Sprinkles and gave the a nice consistency to to the mix while adding a lot of nutritional value with the Omega-3s.
Make note when following this recipe: I don't often measure ingredients while preparing food. I just throw in the ingredients until the mix looks like how I think it should. All the measurements below are estimates, excepting the kidney beans and egg. You make need to add more or less flaxseed and bread crumbs based on how much sauce/salsa you use.
This recipe is great to make ahead and put in the crockpot until you are ready to eat. Great hit for parties, carry-in dinners and even with nacho chips.
Use your bread machine to make this delicious, Italian bread to complement a healthy soup and salad meal.
