Threw together a quick pico de gallo to go with my chorizo and rice stuffed zucchini, last night.
I use the crock pot for this, but it can easily be cooked on the stove. Great source of protein and fiber.

This is an easy recipe where you can change whatever you want. Use hot, medium, or mild salsa. If you like corn tortillas, you can substitute them for the flour ones.
Place all ingredients in slow cooker. Finish when chicken fully cooked through. Add grated cheese, gaucamole, and hot sauce to taste ( ot included in calories )
Grill onions in oil. Add tomatoes, spice mix ( half packet ) and 1.5 cups cooked black beans. Puree. Then add corn and remaining black beans and simmer for 10 minutes.
