This nearly fat-free, gluten free cake is delicious as breakfast, a snack or served with a savory soup. May add raisins if desired. Serves a large group!
These are not low-cal, but pretty low on the impact scale for glycemic index. They are not high in carbs or sugar when compared to regular cookie recipes. Not healthy, just a better choice than regular cookies.
break up the Kale into bite size chunks. Place in a cookie sheet with olive oil drizzled over the top. Salt and fresh ground pepper to taste. Sprinkle Parmesan Cheese over it and bake at 350 for 15 min or so. Even my 2 year old loves it.
This recipe I use that I altered a bit by adding ground flaxseed and substituting white flour with whole wheat flour to increase the fibre. They're a hit with my friends and family. You can substitute any frozen berry if you don't like blueberries. Enjoy!!
