Vegan is supposed to be sweet and moist. This is just that without any animal products and very raw so we get all vitamin supplement.
My friend used to make this wonderful dip using canned chili, diced canned tomatoes, topped on cream cheese and then sprinkle the whole thing with shredded cheese. It was amazing, but I needed more fiber and protein. I have added, black beans and corn to mine. Wow, is it yummy!
I have a similar recipe for the crockpot, but didn't have 4-6 hours tonight. this takes a jar of sauce with meat in it, some ricotta, flavored shredded cheese and no boil noodles. Pretty easy!

Slow cooked chili, made with dried beans so they are easier on the pocket book and don't have the large amounts of sodium and such in them that you find in canned beans... just be warned, you will need to adjust your spices some, because this is a VERY mild chili, so if you like it hotter you will need to make adjustments to iit.

An easy mexican rice that can be eaten alone, or put into a tortilla for a delicious burrito. You can play around with how much of each ingredient to use, so the amounts I used are variable. You can also add more ingredients, such as taco seasoning. It's a fun recipe to play around with!
