Fry bacon, then crumble. Sauté onions, celery and carrots in grease until tender. Add fennel seeds and garlic and cook on low fit a few minutes. Add broth, potatoes and tomatoes, and salt and pepper to taste. Cool until potatoes are done. Add shrimp and cook for 10 minutes. This is good as soon as you make it, but it’s much better the next day.

These are not sweet, but good nonetheless. The recipe is based off of one from King Arthur Flour. They're quite hearty and super healthy. Feel free to add dried fruit/nuts in place of the blueberries, and change up the spices if you want. Also, I half filled the muffin cups to get 39 muffins, which yielded smaller muffins.
