This is a staple at Christmas and Thanksgiving in my family. I'm going to be making this soon for Canadian Thanksgiving and might make a few changes to the directions or serving size after making it, as this is mainly from memory :).
This can easily be made the day before and reheated in the oven for about 40 minutes before serving.
It's a lot healthier than many other sweet potato casseroles that I've seen!
A low cal, low carb and high in vitamin C substitute for mashed potatoes. My mother used to make mashed cauliflower for the family when we were all on Atkins. I ditched the low carb diet a long time ago, but this has remained a favorite of mine.
You can use any combination of peppers, and almost any left over vegetable you have in your fridge. I sometimes subsitute corn for the hominy. Any wild rice mix
this is a twist on a family recipe. the original recipe calls for 1/2 cup sugar, which i subbed with 12 packets of sweet'n'low, 1/2 cup margarine, which i subbed with 3/8 cup extra virgin olive oil. for the orange juice, i opted for Tropicana's Trop50 orange juice. and i used a whole grain, unbleached, unenriched flour (King Arthur brand).
Wonderful hershey's cocoa brownies with semi-sweet chips, white chips & coconut...not diet orientated but great for special occasions.
Colorful for the eye and for the tastebuds, this dish is a healthy favorite.
