This super easy soup is really high in nutrition, for very few calories. Makes a great meal with some rice or crackers.

I found that someone else has submitted this recipe but I have made some changes from the original (Healthy Cooking Feb/March 2010 issue, page 59). I took the reduced sodium a bit further (who knew just how fast our sodium intake adds up?!?!) and used not only reduced sodium beef broth but also no salt added tomato sauce and no salt added diced tomatoes. I also used 96% lean ground beef instead of 90% lean. I have also omitted the 1/2 cup of Parmesan cheese for the top. This has great flavor & is even better the second day.

Dark green, earthy kale contrasts with the mild yellow potatoes, but you can use fresh spinach in place of kale.

An "everything but the kitchen sink"-type soup, we used whatever leftover canned, frozen and fresh vegetables we had at the end of the week. It's great when you've got several odds and ends and you don't want them to go to waste.
Campbell's low sodium chicken broth, 1 cup
Cauliflower, raw, 1 head, large (6-7" dia)
Onions, raw, 3 medium
Butter, unsalted, 2 tbsp
Water, tap, 6 cup
Paprika, 1 tbsp
Garlic powder, 1 tbsp
Thyme, ground, 1 tbsp
Pepper, black, 1 tsp
Pepper, white, 1 tsp
Sage, ground, 1 tbsp
I made this the other day for a big family function, and there wasn't a drop left in the bowl after dinner. :) Big success...
Got this off the food network website, I substituted reg mayo for miracle whip, thats what we use.
