This recipe is a no salt added soup. If you want to add salt by all means do but I prefer to add mines to my bowl. Sometimes I squeeze some juice from a lemon to make it a little more tasty.
I eat this soup with either salad, a chicken salad or other type of sandwich on pita. Very low fat and very filling. Can be eating for lunch or dinner or just as an afternoon snack.
Corn, Cannelloni Beans, black beans and red/orange peppers combined with lime juice and other ingredients to make a fantastic side dish. I'll eat this as a side with grilled chicken or add it to fish tacos.
Cabbage, onion, carrots and broth. Simiple but great for you!
This recipe is adapted from FoodNetwork Claire Robinson's "5 Ingredient Fix."
Slice shallots and sweat for about 5 minutes in large pot with olive oil on low-medium heat. Add 4.5 cups chopped broccoli (I used florets and some of the stalk). Cook for a minute. Add 2 cups low sodium chicken stock and bring to a boil. Lower heat to a simmer and cover for about 15 minutes, or until broccoli is fork tender. Let cool for a few minutes. Then put in food processor and process a very small amount (try to keep some broccoli intact for texture). Transfer back into pot and whisk in 4 oz. mascarpone cheese. Be sure to season with lots of salt and pepper. Serve with crustini or crispy bread. Feel free to create your own adaptations by adding bacon or cheddar cheese.
Greek Yogurt Cucumber Sauce. Ususally served with Gyros or on salads. Delicious with raw vegetables
A versatile sauce. Put over zoodles, or shirake noodles. Add meat if desired.
