Got this recipe from All You (October 2010 issue), and altered it to be lower in fat and calories! This comes out to 3 Weight Watchers points per serving.
I made these cheese balls for a party recently and got such rave reviews (read: demands for more, and threats against my life if I didn't produce them in a timely manner) that i felt I should share the recipe for any of you who wanted to risk such a thing yourselves!

This time of year is great for hearty, spicy soups that use some of the best peak vegetables. If you cannot find chayote squash in your area, look for other marrow type squashes such as zucchini. If you cannot find celeriac, use an equivalent amount of celery. If making fresh roasted peppers is too much of a pain, buy the jarred or canned kind, or leave them out. Make it your way :)

Flavorful salad that's also filling. Use whatever veggies or fresh herbs you want. This one has mint, for a tabbouleh-like taste, but fresh dill would also be good.
I add fruit juice to almost all salad dressings - even store bought ones - because I vastly prefer the taste of dressings when the strong flavor of oil and vinegar and spice (or salt!) is diluted a bit. As a bonus, it makesthe dressing spread through your salad further and reduces the need for more calorie laden dressing.
