This is my version of a soup served at our local Mexican restaurant.
This is the recipe for the cabbage soup diet from the Cabbage Soup Diet book. The soup is bland but you can add various spices or herbs to enhance the flavor. Fresh basil or cilantro taste great. I add a couple boullion cubes or chicken broth for flavor.
This could easily be made vegetarian by removing bacon or using a bacon substitute.
The corn and sweet potato creamed with skim milk gives the soup a slight thickness without the need for other thickeners.
Easy to make and delicious.... eat with a piece of bread for a full meal!!
I usually make vegetable soup with V8 in the stock and add tomatoes. This soup has no tomatoes and is low calorie soup with a unique blend of vegetables that is rich an hearty.
