Kinda reminds me of clam chowder due to the look and texture. Personally, I have never had clam chowder, but you get the idea. I omitted the salt and parmesan cheese. The original recipe called for 2 meduim leeks.

It's rib-sticking chili without ground beef. For a no-sweat version, use frozen chopped onion, frozen diced bell peppers and jarred minced garlic. Use your choice of toppings, such as lowfat sour cream, grated cheese, or minced red onion.
Great for when comapny comes because it serves so many, or make as a dinner and have leftover for lunches that week.
You can reduce the sodium by replacing the water and chicken bouillon with a low sodium chicken stock.
This is great for a cold winters day. Throw it all in the crock pot in the morning and when you come home it's done!
