This is a great alternative to the boring protein bar. It tastes like cake but has a high enough amount of protein to help stabilize your blood sugar and stave off hunger. It's low in net carbs (about 7g per serving) and they are Whole Wheat. You could even serve this as 4 servings and still not go over 15g of carbs per serving.*
*label does count erythritol carbs but it is a 0 Cal sweetener.
The molten chocolate cake variation on the 1-minute muffin recipe was created by Linda Sue, and the Mexican variation was created by me, because I adore Mexican hot chocolate and thought that would be great flavor. I have played around with this and I think it's really, really good. I have no idea why the one rater gave it such a mediocre review, because I really think this is amazingly good for such a quick and healthy recipe. Maybe they didn't realize it was not going to be exactly the same as something made with white flour? Make this instead of having an Atkins bar or going on a chocolate binge, I promise it will sate your deep dark cravings! Careful, it's addictive so you may want to split it with someone you love! I thought this might make a good birthday "cake" for a low carber - if plated prettily and topped with the optional ganache, a squirt of whipped cream and some shaved LC chocolate, it would be really celebratory and won't send you into a blood sugar coma.
This treat is pure summer; Fluffy Angel Food Cake melds with sweet, juicy pineapple, flaky coconut and a splash of coconut-flavored rum!
Cook veggies in oil til tender. Add 2 T flour and 1 T curry powder. Stir over medium heat three minutes. Gradually add broth; bring it to a boil. Reduce heat and simmer, covered, 15 minutes. Add rotisserie chicken, one Bayleaf, 1 teaspoon salt, pepper, 1/8 teaspoon dried thyme, 1/2 teaspoon grated lemon rind. Simmer, uncovered, 15 minutes. Discard Bayleaf. Stir in 1/2 cup half-and-half, room temperature. Little soup over cooked rice and individual bowls. Top with flaked coconut.
