Really for a special occasion cake or as a truffle filling with a bit of liquour
This is a terrific, special occasion cake with an incredible texture. If tightly wrapped in cling-film, they can be kept in the fridge for 2 weeks. They also freeze well and makes terrific cupcakes too.
This recipe does require a great deal of mixing which can not be skipped or shortened. It is well worth the effort though and easy in a stand mixer.
These are so yummy! Not the lowest in calories, but not so bad for such an indulgent treat. :)
This is a dense cake. I modified this from Chocolate Covered Katie Blog. Her numbers are:

For a double layer cake, simply double the recipe and bake in two 8-inch pans. Oh, and the pic is hers, too! I used Chocolate milk to mix, cause if you are going chocolate - GO ALL THE WAY!
Preheat oven to 350
Sift together dry ingredients. Add Oil, eggs, buttermilk and vanilla. Beat for 2 minutes on medium.
Fill paper baking cups halfway.
Bake 20 minutes or until tester comes out clean
transfer to wire rack and cool for at least 20 minutes before removing cupcakes
*tip use eggs at room temperature
Dairy Free and Egg Free. This recipe from my childhood came in handy when my son was born with allergies to dairy, egg and peanut. There are many variations of this cake in existence. It is easy to experiment with it's ingredients to come up with different versions, such as, vanilla cake, banana cake, etc. It's fun and easy to make with kids. My mom taught this recipe to me about 38 years ago.

This recipe will yield 1 half sheet cake or 2 9" round pans, I also got about 9 cupcakes when I made the round pans.
Cooking time will depend on if using a round or half sheet pan. It took 50 mins for 2 9" pans.
Wonderful taste, texture and very moist.
Not great for the diet, but if your dying for some chocolate cake? You can have it in 3 minutes.
This is a great lower calorie cake for a birthday or special occasion.
