Great grab and go breakfast. I love these on Sunday mornings to eat before church. It is a harder recipe, atleast for me! lol If anyone has any ideas to simplify it or make it healthier, that would be great!

Sort of between and omelette and a custard. Tasty with a little butter (or spread) on top.
Makes 7 servings, 1/2 cup batter each (about 3 pancakes 3 inches in diameter). These are great even without syrup, and I pack them in a lunch for my kids with a separate container of plain yogurt mixed with a little maple syrup for them to dip the pancakes in.
