I am interested in replacing the butter with a beetroot purée. Not sure how it will taste.
This recipe makes 8 pancakes using 1/2 a cup of batter per pancake. These are very dense, more like American pancakes rather than thin and light like UK pancakes.
I usually put a teaspoon of honey on top, and serve with fruit or nuts.

I made this overnight oatmeal with almond milk, which adds delicious flavor and nutrition. If you omit the butter, this recipe is lactose-free and vegan. It tastes delicious and quite different from my original apple-cinnamon version. I love the flavors of cherries and almond together. The almond flavoring comes from almond extract, almond milk, and toasted almonds sprinkled on top.
Eternally moist and delicious- if anyone wants to try it with apple sauce instead of oil, and any other modifications to make it healthier, by all means post!

This recipe is modified from the Hodgson Mill box and is so good! I divided the recipe in half and came out with 8 enough for 8 muffins.
I love the harvest grain and nut pancakes at a popular chain, but not all of the expense of going there, not to mention the extra butter and oil. This copycat recipe gives the same taste! Excellent topped with a small amount of light heart healthy margarine, bananas, and a tiny bit of maple syrup.
