1. Preheat oven to 325 F
2. pour entire container of egg sub. in a bowl and mix with milk.
3. chop veggies and dice turkey bacon
4. coat 9x13 dish with cooking spray
5. Layer veggies on the bottom dish
6. sprinkle veggies with chopped up turkey bacon
7. pour egg sub. mixture over veggies and bacon.
8. sprinkle cheese over top
9. bake at 325 for 40 minutes or until cheese bubbles and slightly browns.
This recipe makes a huge batch of muffins. The batter can be mixed up and kept in the fridge for up to a month so you have fresh muffins every morning.
My husband surprised me this morning by making some muffins from my 1955 Betty Crocker cookbook. After pitching a fit because I didn't know if I could eat them, I figured I should find out how bad they are for me. Nutrition info is for 9 muffins because that is how many DH made this morning out of the batter. But, you could and should make 12 more reasonably portioned muffins out of the batter should you try these. But, they are quite good! Worth the calories for a brunch.
Moist, flavourful and like no other bran muffin you've had before. Just a hint of sweet and depending on your bananas you could easily use less sugar or none and still have the right amount of sweetness.
